This delicious recipe for chocolate energy balls from Munchy Seeds is ideal when you're looking for a sweet treat. We particularly love to enjoy them alongside a steaming cup of coffee or hot chocolate.
Free from refined sugar, these healthy chocolate energy balls are also vegan and couldn't be easier to prepare. Make a whole batch and keep them in an airtight container in the fridge. They'll keep for around a week so are ideal for a quick and easy snack when you're need of a pick me up!
Healthy chocolate energy balls recipe
Makes: 19 Balls
Prepare: 25 minutes
210g chickpeas, cooked
150g soft dates, stoned
20g coconut oil
1½ tbsps cacao
Seeds to top (optional - Munchy Seeds Salted Caramel work well here)
In a food processor, add the stoned dates, chickpeas, coconut oil and cacao. Process until you have a smooth dough. You may have to scrape down the sides of the processor several times to make sure that all the ingredients have minced.
Tip into a large mixing bowl. With your hands, bring the mixture together to make sure all the ingredients are evenly distributed. It should be slightly sticky.
Scoop out rounded tablespoons of the dough and roll into balls. Set aside as you go. Roll into approximately 20g balls.
Place the seeds in a shallow bowl. Roll the balls in the seeds to coat. Refrigerate for at least one hour. Bring up to room temperature before eating. The chocolate balls will keep for a week, refrigerated in an airtight container.
